This is probably the simplest recipe I found for making a sponge cake. I found this in a children’s recipe book.

Including this here just in case you get a craving for a cake or it’s someone’s birthday (but pastry shops are closed) and you happen to have the time and all ingredients in your fridge…

Let’s dive in!

Here are the ingredients:

milk- 120 ml

cheese- 3 sheets

eggs- 2 large pcs.

sugar- 35 g

all-purpose flour- 30 g

lemon juice- 1 tbsp.

Here’s how:

  1. In a saucepan, over low heat, warm your milk and cheese.
  2. In a mixing bowl, mix egg yolks, half of the sugar, warm milk and cheese mixture (1), all-purpose flour, and lemon juice.
  3. In a separate bowl, make a meringue. Whisk the remaining sugar with egg whites.
  4. Fold (2) and (3) mixtures and pour into a baking pan.
  5. Place the baking pan on a baking tray that has hot water.
  6. Bake in a preheated oven (160 C) for about 30-50 minutes.

NOTES:

  1. Three sheets of cheese mean those individually wrapped cheese they put on hamburgers.
  2. When combining milk and cheese, remember it should be warm (not boiling hot).
  3. You may add some fresh whipped cream and fruit toppings of your choice.
