World’s Second Best Egg Dish | Recipe

In case you’re wondering what the best egg dish in the world is, it’s Japan’s ajitsuke tamago (ramen eggs). Nobody beats Japan in the culinary arena, so let’s just move on and cook the second-best egg dish. LOL

The second best egg dish is from my home country, the Philippines. We call it tortang talong (eggplant omelette).

Tortang talong is perfect for breakfast since the fiber and protein found in this dish can definitely keep one feeling satiated through the morning.

Nutrition experts recommend having protein and fiber-rich foods first thing in the morning so that we feel good navigating our first few hours of the day…

Ingredients:

eggplant- 1 pc

egg- 1 pc

salt and pepper- to taste

cooking oil- about 1 tbsp.

Procedure:

  1. Roast the eggplant directly on fire. (This is Asian cooking. FUIYOH!)

2. As you wait for your eggplant to get charred, beat your egg and season it with salt and pepper.

3. Peel your charred eggplant.

4. Gently mash with a fork (to flatten). And dip it in your egg mixture.

5. Fry.

6. Flip and voila!

NOTES:

  1. When roasting, turn the eggplant occasionally to make sure it is cooking evenly. Don’t be scared when the peel turns black– that’s the color you need. You will know it’s done when you have a charred, soft, and steamy eggplant.
  2. Peeling the eggplant may not be fun since it must be done while your aubergine is steaming hot. If you wait for it to cool, the peel may not come off easily. Forceps used in surgeries and/or experiments or yakiniku tongs can save your fingers from getting hurt. Hope you have them…
  3. We normally eat this with rice and banana ketchup. YUM!
