Happy Valentine’s Day!
Today, I would like to share a recipe that I always come back to. Been using this recipe for the past 10 years. How time flies!
I refer to this recipe each time I crave for soft and gooey brownies or when I feel like giving away chocolates for Valentines.
Let’s get started!
Ingredients:
70% dark chocolates- 85 g
unsalted butter- 115 g
sugar- 250 g
eggs- 2 pcs
vanilla oil- 1/2 tsp
sea salt- 1/2 tsp
all-purpose flour- 85 g
Procedure:
- Boil water in a pot.
- On a stainless mixing bowl, melt your bitter chocolates and butter with the steam coming out of your pot of hot water.
Step #3 onwards will require you to continuously mix with a wire whisk until ingredients blend well gradually. The hot water underneath your mixing bowl should be warm enough to keep the chocolate and butter melting but at the same time cool enough NOT to cook your fresh eggs when you drop them. This is a bit tricky but I hope you can manage. *wink*
3. Add in your sugar.
4. Drop the eggs one at a time.
5. Add your vanilla and sea salt.
6. Sprinkle your sifted AP flour. Mix until smooth.
7. Preheat your oven to 160 degrees.
8. While preheating, pour the mixture onto your baking sheet.
9. Bake for 20 to 25 minutes.
NOTES:
- I hope you have a mixing bowl with just the right size to be placed on top of your pot. This creates an instant double broiler. It should be able to sit steadily to avoid any accident.
- Chopping your chocolates and butter into smaller pieces makes it quicker to melt them. *wink*
- I use a 12 pc muffin mold pan instead of a simple rectangular baking sheet to make my brownies bite-sized (as shown in the picture). But please know that any molder would be fine, just make sure to brush room temperature butter on every surface that will touch the brownie mixture. This makes it easier to remove them post baking.
- For added texture, you may top your brownie mix with cashew, walnuts or any of your favorite nuts.
- If you are sugar sensitive, reducing the amount of sugar is OK.
