Hello!

Today, I would like to share a cute and delicious recipe which I read from a Japanese magazine last February. I promised myself that when fava season comes, it’s time to make croquettes!

I just tweeked some parts that require the use of a microwave oven, cling wraps and instant flavoring powders.

In this blog, I want to make sure that every recipe is safe for you (and me) and our environment.

So, let’s dive in!

Here are the things you need…

fava beans- 75-100 g

potatoes- 200 g

salt- 2 pinches

dashi– 1 tbsp.

katsuo flakes- 1/2 tsp.

dried shrimps- 1 tbsp.

all purpose flour- 1-2 tbsp.

egg- 1 pc.

bread crumbs (panko)- 20-40 g

cooking oil- right amount for deep frying

Here is your prep guide…

  1. Peel your fresh fava beans. Set aside.
  2. Peel your potatoes and boil them until soft. Mash.
  3. Add salt, dashi, katsuo flakes, dried shrimps to your mashed potatoes. Mix well.
  4. Add in your fava beans and shape the mixture into cylindrical or log-like rolls.
  5. Sprinkle them with all purpose flour, dip in freshly beaten egg and roll them on bread crumbs.
  6. Deep fry until golden brown. 

NOTES:

  1. To those who do not have access to fava beans, lima beans (patani) can be used as an alternative. Or any beans you can grab won’t be bad, I think.
  2. You can find katsuo flakes, dashi, panko and dried shrimps from Asian supermarkets. (I hope you can find one in your community.)
  3. This recipe makes 5-6 pieces of croquettes.
